- 3 tbsp Butter
- 1 cup Chickpeas soaked and boiled
- 500gms Chicken cut into pieces
- 5 Onion chopped medium size
- 4 tbsp Ghee
- 1 cup Tomato puree
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 1 tsp Red chilli powder
- 5-6 pods Green cardamom
- 1 tbsp Dried pomegranate seeds
- As required Water
- to taste Salt
- 1 tsp Garam masala powder
- 2 tbsp Coriander leaves chopped
Instructions to make to make Amritsari Chhole Chicken
- Heat butter in a karai. Melt it. Be careful not tot burn it. Fry and sear the chicken pieces on high flame until brown spot appears on them. It will take at least 7-8 mins. Once done remove it in a bowl. Keep aside for later use.
- In the same karai, heat ghee with the remaining butter. Add onion chopped and fry until it turns golden brown. Add ginger, garlic paste and fry them till the raw smell goes away.
- Now add the red chilli powder, tomato puree, salt and saute until the tomato puree is cooked and the ghee and butter comes to the surface. Keep sauteing. You can add a dash of water if the masala sticks to the bottom of the karai. Cover and cook for 3-4 mins.
- Add the green cardamom pods,chicken and mix well. The chicken should coat the masala well. Saute and sear the chicken with the masala for 7-8 min on high flame.
- Now add the chickpeas boiled, dried pomegranate seeds. Give it a mix. Add water and let it come to a boil. Cover and simmer on low flame until the chicken is cooked through and softens. It will take near about 30-35 mins approximately(depends upon the type if chicken).
- Open the lid. Add garam masala powder, coriander leaves chopped. Mix well. Bubble on low heat for 5 mins. Check for the seasoning. If required add more salt. Dhaba style chhole chicken is ready. You can serve it with paratha, kulcha, phulka, chapati, rice.
