- Marinate chicken with curd and little salt for an hour. Meanwhile boil water in a wide mouthed pan with salt, 2 bay leaves few half crushed cardamom, cinnamon, laung, few whole black pepper.When the water boils,add the rice and semi boil it with little lemon juice and 1 tbsp oil.
- Drain the rice and spread out the rice alongwith the semi crushed whole spices and allow the moisture to dry up.
- Make a paste of 1 small onion, green chillies and 1tbsp ginger paste.Add this paste to the marinated chicken alongwith 1 tbsp biryani masala and either pressure cook just 2 whistles or cook covered in a non stick pan.Dry up the excess moisture.
- Finely chop 2 onions and fry with a sprinkling of salt and pinch of sugar to make it crispy.Set aside.
- In the remaining oil add the eggs with little salt and fry lightly.Fry the boiled halved potatoes also.Now add the cooked chicken alongwith the fried potatoes and eggs and toss.Add little fried onion. Meanwhile soak the saffron in lukewarm milk.
- Take a wide mouthed microsafe bowl and put a layer of chicken.Spread a layer of rice.Sprinkle little saffron soaked milk, a little oil and a pinch of orange red food colour.Spread again a layer of chicken,egg and potatoes.Top it with another layer of rice, a drop of mitha attar and ghee.
- Microwave 3 minutes on high power.Lightly toss from bottom and microwave 2 minutes.Serve garnished with beresta (fried onion).An accompaniment of cucumber onion raita goes well with this dish.
